How to prepare crispy and delicious Rava Dosa?

Rava Dosa is very easy to prepare at home.  The only trouble you will be facing it is that you will not be able to spread the Rava dosas like the ordinary or plain dosas. You will have to start pouring from the outer edges of the dosa tava and reach the centre. There will be small gaps in the dosa.

You will not be able to skimp on the oil used. Plain dosas can be made with as little oil as possible but Rava Dosas do not. They need oil and only then will be tasty.

It takes practice to prepare rava dosas. You need to keep in mind a few things while making dosas.
Prepare the batter at least an hour before you actually want to prepare the Rava dosas.
There is no need to ferment the batter for rava dosa like plain dosa batter. This is an instant dish and can be eaten with in an hour of preparing the batter.
The batter should not be thick but of a pouring / watery consistency, like, a thick buttermilk. You can also refrigerate the mix for 3-4 hours before preparing the dosas. I have made it many times with just an hour soaked batter and they have come out crispy and delicious.

In fact the most important factor in the making of rava dosa is adjusting of the heat control. An iron tawa requires higher heat as compared to non-stick pan. I have used an iron tawa always and I prefer that to a non stick pan. Non stick pan needs only a medium flame to maintain the heat. So adjust heat according to the pan you use to prepare dosas. If you feel the centre part is coming thick and not getting cooked properly, cover the dosa while it is cooking, with a lid.

At the time of preparing rava dosa, use the ladle to stir the dosa batter well, as the flours tend to sink to the bottom of the vessel. So blend the mix well with the ladle each time, before you pour the dosa batter over the tawa.
Don’t skimp on the oil to save a few calories, as it helps the rava dosa get crisp. (don’t ever think of calories when you want to relish rava dosa)
The batter can be stored in the refrigerator for 2-3 days after which the dosas when you make them will not taste that good, it will taste sour. Fresh batter will be the best for preparing Rava Dosas and so try to make them with in the 24 hours of preparing the mix.

Variations you can have while preparing Rava Dosa
There are many variations in preparing rava dosa.
You can add grated carrot to the batter along with rest of ingredients.
Add freshly grated coconut to the batter.
Add some sliced onions while the dosa is cooking.
Broken cashewnut pieces can also be added to the dosa batter.

How to prepare perfect thick curds at home?

Fresh homemade curds  are the best to use. They are full of nutrients  and good flavour to boot.  After your lunch and dinner try to eat some curd rice. You just have to mix the rice mashed lightly with the fresh curds and a little salt. take it along with lime or mango pickle. It is yummy as well as full of nutrition, you will end up asking for more.

How to prepare flavoured  Curd Rice 


Ingredients needed to make curds at home
1 cup milk
1 tsp curd

How to prepare curds at home
First boil the milk, using either a milk cooker or a sauce pan.
Remove as it starts boiling and let cool. It should be just warm to the touch.
Now add the milk and the curds together and mix well. Both should blend nicely.
Cover and keep the container  without shaking it  till it forms fresh curds.
The milk will take about 4-5 hours to set nicely.

Points to Note
The milk should not be very hot.
The curd which you are using as a culture should be fresh.
It is preferable to make curds in the daytime, it sets quickly
Do not use old curds which have a sour smell for setting new curds.

Use this fresh curds and make Raitas and serve as a side dish.

How to prepare crispy and golden coloured Dosa?

 You have to have a Non stick Tava, Spatula, a small ball of cloth to wipe the tava with oil and a ladle to pur the batter in the tava and spread the Dosa batter. To know how to grind the batter see here

Ingredients for grinding the Dosa batter:
4 cups Idli rice
1 cup Urad Dal ( whole and deskinned )
1 tsp fenugreek seeds
Oil as needed
Salt to taste

How to make a Dosa - Just follow the method given below
Heat a Non stick Tava. As soon as it gets hot to the touch, wipe the tava with a little oil in a cloth.
Then take a ladleful of batter and pour it into the center of the tava. Put the ladle in to the middle of the batter and slowly rotate the spread the batter  to form an round on the tava.
If you like the dosa to be thin and crispy you have to make the batter as thin on the tava as possible.
Don't get scared, Practice makes a Man or should I say a Cook, Perfect.
Once you see the batter getting crispy on one side ,( it will curl at the ends)  flip it over and then after a few seconds remove from the tava.
Serve hot with any Chutney, Potato Masala and Sambar.

How to boil Macaroni in Microwave?

You can cook  or boil macaroni in  microwave, I am giving you the method for boiling, about 250 grams of Macaroni, in the microwave.  I wouldn't suggest you to do this regularly, once in a while if you are in a hurry you can do this.

Ingredients needed for boiling Macaroni in the Microwave
250 grams of Macaroni
1 1/2 litres of water
a big glass bowl enough to hold the boiling water
1 tsp oil
salt to taste

How to boil macaroni  in a microwave 
take the water in the glass bowl and keep it in the microwave. Put the temperature of the Microwave in HIGH and bring the water to boil.  The time will vary according to your microwave. It usually takes 2-4 minutes.
Then open the microwave, add the oil, macaroni and the salt. Again put the microwave on high  heat for about 5 minutes. Stir in between after two minutes.
Remove from the microwave after 5 minutes, cover and allow to stand for 5 minutes. Then drain and keep aside.
Now you can use the macaroni as per the recipe you have chosen and make a tasty and delicious dish of macaroni.

How To Prepare a Stock

There are a few basic rules which are commonly practised while preparing the stock and they are;
The stock ingredients are simmered by adding them to cold water. This process of simmering,  promotes the extraction of collagen, which may be sealed in by hot water.
Stocks are simmered gently, with bubbles just breaking the surface, and not vigorously boiled because if boiled it will become cloudy and not clear.
Salt is not added to a stock unless needed in the recipe, since most of the stocks are just made as a base to make soups and sauces.
If both meat and vegetables are used  in preparing the stock, meat is added first before vegetables and the scum that arises is skimmed and removed.  Only after removing the scum from the meat, vegetables and other ingredients are added to the simmering stock.
If pork or mutton is used, the cook might need to remove the fat, which can be done after the stock is finished and cooled. The fat which floats, separates, and solidifies into globs of lard within the stock can be removed easily.
These stocks can be frozen and stored in air tight containers in the Freezer for an indefinite period but are better tasting when used fresh.

How to Prepare Basic Chinese Fried Rice

Ingredients needed for making Fried Rice :
1 cup cooked rice
2 tbsp oil
1/2 tbsp soya sauce
1/2 cup spring onions chopped
1/2 tbsp vinegar
Salt and pepper to taste


How to Cook Chinese Fried Rice :
Heat oil in a pan. Separate onion and green leaves part of the spring onions.
Add onions into the oil and fry till they turn transparent.
Add the cooked rice and stir fry for 2-3 minutes. The oil should coat each every rice while you mix rice and the oil.
Add soya sauce and vinegar with salt and pepper to taste.
Toss over a high flame for 1-2 minutes. Garnish with chopped spring onion leaves and serve hot.


Points to Note:
The rice should not get over cooked, it should only be 3/4ths cooked.
You can also use left over rice of the previous meal for the fried rice.
You can add mixed chopped vegetables like carrots, french beans,cabbage etc It becomes mixed vegetable rice.
You can add scrambled eggs to that and it becomes egg fried rice.
You can also add chopped mushrooms, shred chicken etc and make mixed fried rice.
