Unakka Chemmeen / Dried Prawns and Peanuts fry
Ingredients for Unakka Chemmeen / Dried Prawns and Peanuts fry
1 cup dried prawns
oil required for deep frying
1 cup onions sliced finely
handful curry leaves
1/2 cup groundnuts / peanuts
2-3 tsp red chilli powder / as per your taste
salt to taste
How to prepare Dried Prawns and peanuts fry
Remove the head and tails of the dried prawns, wash well and and keep aside.
Heat oil in a fry pan, enough for deep frying.
When the oil gets hot enough add Curry leaves and sliced onions and deep fry them till they are golden. Remove and keep aside.
Fry the peanuts in the same oil and keep aside.
Now fry the prawns and keep aside.
Now mix all the deep fried ingredients, sprinkle the red chilli powder and salt to taste.
While adding salt do remember that dried prawns have salt already added in them.
Mix all the ingredients together till they blend well. Serve hot.

Unakka Chemmeen Vevichathu
Ingredients needed for the Unakka Chemmeen Vevichathu with Coconut
2 cups (250gms),
1 1/2 cups of dry prawns cooked in 2 cups of water,
1/2 dsp. coconut oil,
10 or more dry chillies to taste,
1/2 dsp. coriander,
1/4 tsp. pepper,
1/8 tsp. fenu greek,
1/8 tsp. mustard
1 small piece turmeric,
2 dsp. red onions sliced long
2 stalks curry leaves,
2 cups of water,
4 peices of fish tamarind (kudampuly), 1/2 tsp. ginger sliced long, 1/2 tsp. garlic sliced long, 1/4 to 1/2 cup coconut cut into thin chips,
1/4 cup stock from boiling prawns,
Salt-to-taste
How to prepare Unakka Chemmeen Vevichathu with Coconut
Heat 2 tsp oil in a Kadai or a non stick pan.
Roast dry-chillies, coriander, pepper, fenugreek seeds, mustard to a golden colour. Then grind to a smooth paste with turmeric powder. Keep aside.
Heat 2 tbsps of oil and splutter mustard. When it splutters add onion and curry leaves and saute till the onions turn colour and transparent..
Add the ground paste and stir well till it is browned and then pour the 2 cups of water.
As the mix starts boiling add the remaining ingredients, like Kodam Puli, garlic, ginger etc and the cooked prawns.
Mix the remaining liquid / stock you got after cooking the prawns.
Cover the pan and cook till the gravy gets thick. .
Serve with hot steaming plain rice as a side dish.

Grilled Garlic Pepper Prawns
Ingredients needed for Grilled Garlic Pepper Prawns
250 grams big size prawns
10 flakes of garlic
7-8 peppercorns crushed
2 tsps olive oil
3 tbsps butter
Salt to taste
1 tsp lemon juice
1 tbp Rum
How to prepare grilled garlic pepper prawns
Heat olive oil in a non stick fry pan.
Add butter, garlic and half of the crushed pepper , saute for about 2 minutes .
Now add prawns, salt to taste, remaining crushed pepper and lemon juice. Saute well.
Be careful while cooking prawns. Since the prawns cook very fast, check that they do not get overcooked.
Transfer in to a serving dish.
Heat a litle rum in a deep spoon till it catches fire. Pour over the prawns immediately. Serve hot.

Prawn Masala Curry
Ingredients needed for the Prawn Masala Curry:
2 cups Prawns
100 grams butter
3 cardamom
4 flakes garlic
1 tbsp coriander powder
1 tsp chilli powder
1/4 tsp turmeric powder
1/2 cup fresh curds
1 tsp sugar
2 tbsp cashewnuts
4-6 green chillies
1/2 tsp garam masala
1 tbsp chopped coriander leaves
2 green chillies crushed
1 tsp chopped small onion
How to prepare the Prawn masala Curry:
Heat a fry pan , add about half of the butter. When it melts add cardamom , when done add crushed ginger and garlic.
Then add chilli powder, coriander powder and turmeric powder saute for a minute.
Add cleaned prawns and mix well.
Add beaten curds, crushed green chillies, sugar and salt to taste, mix well. Cover and simmer till the prawns are done.
Add ground cashew nuts, mix well.
Heat the remaining butter in a fry pan, add the chopped onions, crushed green chillies and garam masala. Once the onions turn golden add to the prawn mixture. Mix well.
Serve garnished with chopped coriander leaves.
