A chilling Thandai recipe from Rajasthan



Ingredients needed for the Chilling Thandai Recipe
5 cups full cream milk
1/2 cup powdered sugar
10 to 12 black peppercorns
a few saffron strands

Grind into a fine powder the following ingredients and keep aside
1/4 cup almonds
2 tbsp poppy seeds
2 tbsp fennel seeds
1/2 tsp cardamom powder
20 white peppercorns

How to prepare a chilling Rajasthani Thandai?
Heat the milk in a pan, boil and allow it to cool to the room temperature. Keep aside.
Add the ground nuts and spices powder to the milk and mix well. Chill  the mixture in the refrigerator for 3 to 4 hours.
Strain the mixture through a sieve, add the sugar, saffron and mix well.
Sprinkle the peppercorns and  chill in the refrigerator.
Serve when needed.
