Grilled Kidneys

While surfing the net I found this interesting and delicious recipe. It is very easy to make if you have a grill at home.


Ingredients needed for Grilled Lamb's Kidneys
8 lamb kidneys
1/2 cup olive oil
1/2 tsp salt / to taste
ground fresh pepper
1 tsp fresh thyme leaves
1/2 tsp dry mustard
1/8 tsp mace
4 tbsps butter
dash Tabasco
1 Tbs Worcestershire sauce
dash cayenne pepper
juice from one lemon

How to prepare Grilled Lambs Kidneys ?
Remove skin and fat from kidneys, split, then marinate for at least thirty minutes in the oil, salt, pepper, thyme, mustard and mace.
You can put the grill on in the oven and cook it brushing with  a mixture of melted butter, Tabasco, Worcestershire sauce, cayenne pepper and lemon juice.  Turn it every now and then and see that it is uniformly cooked.
Grill and brush again with butter mixture and then when done remove to hot platter.
Make a sauce of pan drippings and remaining butter mixture, whisk to deglaze, then pour over the kidneys and serve. You can have it with Toasts and green salad or Mixed vegetable fried rice as well.
