Sometimes I have seen it being used as a thickening agent in soups and sauces just like the way corn starch is used.
Ingredients needed for Koova Kurukiyathu
2 tbsps Arrowroot powder
2 tbsps grated Jaggery
1 tbsp Coconut
Ghee to taste
How to prepare Koova Kurukkiyathu:
Blend arrowroot powder with 1/2 cup of water to make a thin batter like consistency.
Melt the jaggery in water and bring it to boil to form a syrup.
Mix in the arrowroot batter into the jaggery syrup, stirring all the time on medium flame until it gets semi-solid.
Stir in the fresh grated coconut and mix well.
Keep on slow fire for few more minutes.
Pour ghee over the Koova Kurukkiyathu.
Serve this either hot or chilled.
Points to Note
It is usually eaten along with banana chips and plantains for breakfast. This pudding can also be served as a desert, chilled.
