Jack fruit is called Chakka in Malayalam and Kuru are the seeds, so Chakka kuru means seeds of the Jackfruit. All parts of Jack fruit are edible nnd that too from the young and unripe idichakka to the ripe chakka or the fruit are edible. Keralites are known to make delicious curries, puzhukku, payasam and many more with Jackfruits.
Ingredients needed for Chakkakuru Mannga Curry
1 cup Jackfruit seeds
1/2 cup green and unripe mango cubed
1 tsp chilli powder
1/2 tsp turmeric powder
salt to taste
2 cups water
1/2 cup grated fresh cicinut
1 pinch cumin seeds
2 small onions
3 tbsps oil
1 tsp mustard
1 tsp chopped small onions
handful curry leaves
2 red chillies
How to prepare Chakka kuru Mannga Curry
Scrape the skin of jack fruit seeds and cut into two or three pieces
Cook the seeds, mango pieces, a little turmeric powder, chilli powder and salt to taste with enough water till the seeds are tender. mash them lightly and keep aside.
Grind grated coconut, cumin seeds, small onions and the rest of the turmeric powder to a fine paste.
Add the ground coconut paste with a little oil in a fry pan. Fry for a minute or two and then add the jackfruit seeds and mango mixture.
Add enough salt and water to bring the curry to the correct consistency.
Heat the remaining oil, splutter mustard seeds, add chopped onions, red chillies and curry leaves.
When the seasoning turns golden pour over the curry.
