Avaraikka Poriyal

Ingredients needed for the poriyal :

1 cup chopped avaraikka / amaraikka / flat beans
2 tsps oil,
1/2 tsp mustard
3 red chillies broken into bits.
1-2 stalks of curry leaves
Salt to taste
a pinch turmeric powder
a pinch red chilli powder ( optional )
2 tbsps grated fresh coconut

How to cook the Poriyal:
Avaraikka in Tamil and Amarakka in Malayalam are a variety of Flat Beans. Wash and string them just like you do french beans. Then chop them into small pieces. Take one cup out of that and follow the ingredients mentioned in the recipe. The rest you can store in the refrigerator in a Ziploc pouch.

Heat oil in a fry pan, splutter mustrard. Then add broken red chilli bits and curry leaves. Fry till the curry leaves are brown.
Add Chopped vegetables, mix well/ Add red chilli powder, turmeric and salt to taste
Sprinkle some water ( about 2 tbsps) and cover. Simmer and cook till the vegetables are tender. Check for salt.
Add freshly grated coconut, cover and simmer for 2 minutes. Remove and serve hot with rice / rotis.
