Avaraikka Thoran - Recipe Kerala Style

Ingredients needed for Avaraikka Thoran
1 cup chopped Avaraikka
2 tbsps grated coconut
3-4 small onions (shallots)
2 green chillies ( as per taste )
Salt to taste (about 1/2 tsp)
1/4 tsp turmeric powder
2 tsps oil
1/2 tsp mustard seeds
2-3 red chillies broken into bits.

How to Prepare Avaraikka Thoran
Grind grated coconut, onions and green chillies without water to a coarse paste. You can also crush them if you like. Both will taste similar even if the texture is different. Keep the mix aside.
Heat oil in a fry pan, splutter mustard seeds. Add red chillies and curry leaves.
When the leaves turn brown add the chopped avaraikka with turmeric powder and salt to taste.
Sprinkle a little water if needed. the thoran should be dry.
After the vegetables are cooked add the coarse coconut onion and green chillies mix. Stir well so that all the ingredients mix well together. Cover and simmer for a minute or two.
Remove from fire and serve with rice / rotis as a side dish.
