Ingredients needed for Avaraikka Masala
2 cups avaraikka cut into small pieces ( about a cm long pieces)
1 /2 cup chopped onions
1/2 tsp red chilli powder
1 tsp Dhania powder / Coriander powder
1/4 tsp turmeric powder
salt to taste
2 tsps oil
1/2 tsp mustard seeds
1/4 tsp cumin seeds / powder
a few curry leaves
1/2 cup chopped tomatoes
How to prepare Avaraikka Masala
Heat oil and splutter mustard seeds.
Add curry leaves and chopped onions. Saute till the onions are golden.
Add chilli powder, coriander powder and turmeric powder, mix well. sprinkle a little water and see that the masala powders do not burn.
Add salt to taste and the chopped avaraikka pieces. Stir well so that the masala coats the vegetables nicely.
Cover, simmer sprinkling a little water for the vegetables to cook till tender.
When done, add the chopped tomatoes and stir well.
Cook till the tomatoes turn soft and mix with the avaraikka nicely. Simmer for a minute and then remove from fire.
Serve hot with either rice or rotis.
