Recipe for Luchi - Bengal Cuisine

Luchi is a type of Poori made with Refined flour / Maida, very tasty  bengali dish which goes very well with any spicy side dish, like Channa / Chole masala, vegetable gravies etc.

Ingredients needed for making Luchis
2 cups Maida / Refined flour / All purpose flour
2 tsps of butter
2 pinches of salt
oil for deep frying

How to Knead the dough for Luchis.
Similar to Poori Dough but we will using butter and water instead of just water.
First take a wide plate and put in the flour. Add salt and butter to the flour, Mix it, till they blend well.
Then add water little by little so that you get a stiff but pliable dough.
Keep it aside for one hour.

How to make Luchis:
Divide the dough into small portions , about the size of a medium sized gooseberry.
When you roll it up it should be at least 3-4 inches in diameter.
Heat oil in a pan and deep fry the Luchis till they puff up and have a golden coloured top.
Serve with any side dish you fancy. You will love it.
