Ingredients Needed for the Curry Recipe:
3 medium sized Potatoes
1 cup chopped onion
2 garlic flakes crushed
1 stalk curry leaves
2 tbsps oil
1 cup coconut milk
1/4 tsp turmeric powder
1 green chilli chopped
1/2 tsp curry powder
2 pieces cinnamon, crushed
How to Prepare Potato Curry:
Peel and cut the potato lengthwise into two halves, then cut it again , lengthwise, into 3-4 pieces. You should get about 6-8 pieces from one potato according to the size.
Sprinkle a little water and steam / microwave them till they are cooked. If you are cooking on the stove , drain out the extra water and keep aside.
Heat oil in a non stick fry pan, saute chopped onion, green chillies and curry leaves till they are brown.
Add curry leaves, poatatoes and salt to taste. Mix well.
Add the coconut milk and simmer for two minutes. Do not let the curry boil.
Remove from fire as soon as the gravy starts getting thicker.
Serve garnished with coriander leaves ( optional ), goes well with plain rice and roti varieties.
