Ingredients needed for Vendaikka Mezhukkupuratti:
250 grams lady's finger's ( Vendaikka / Bhindi / Okra)
2-3 green chillies
salt to taste ( 1/4 tsp)
1/4 tsp turmeric powder
Coconut oil as needed.
How to Prepare Vendaikka Mezhukkupuratti:
Cut lady's fingers into inch long pieces and just slit them into two. Slit the green chillies but do not cut them into small pieces, lest you misunderstand lady's fingers and green chillies.
Heat a non- stick frying pan, add a tbsp oil.
When the oil gets hot add the lady's fingers and green chillies.
Saute for a few minutes till it starts changing colour.
Add salt and turmeric powder, cover and simmer.
When the vegetables get tender, add little more oil, if needed to roast them.
add curry leaves if you like at this time.
Remove from fire and serve hot with plain rice.
Points to Note:
Even just curd, this vegetable, a little pickle on the side and a pappadam or an appalam to go with, will work wonders for your appetite and will surely fill you for lunch.
