Brinjals Mizhukkupuratti

Ingredients needed for Vazhuthinanga mezhukkupuratti:
250 grams Brinjals ( anyone will do, but long green and the violet variety will be the best)
3-4 green chillies,
1/4 tsp turmeric powder
Salt to taste
oil as needed


How to Prepare Brinjals / Kathirikka/ Vazhuthinanga for the dish
Cut brinjals in to one inch pieces and then cut the into thin longish pieces. Put them into water as soon as you cut them or they'll get a darker shade.
Slit green chillies, keep aside.
Heat oil in a frying pan, add green chillies and the brinjals, after squeezing out the water.
Add salt to taste and turmeric powder. Cover and cook till the brinjals are tender.
Remove the cover and stir till the brinjals are dry. Pour more oil if necessary to get the brinjals roasted.
Serve hot with rice and curds.

Variations:
If you like onions, take a cup of thinly sliced small onions.
Add them to the oil as and when they start changing add green chillies and brinjals.
Then follow the same recipe.
