Ingredients needed for the Mixed Vegetable Pulingari:
1 Potato cut into small pieces
1 drumstick, cut into 1" pieces
2 Ladies fingers, cut into 1" pieces and fried to remove the stickiness
Ash gourd 1 small piece cubed into small pieces,
Ingredients for the coconut paste
1 cup freshly grated coconut,
1 tsp red chilli powder,
1 tsp dhaniya powder,
1/4 tsp fenugreek seeds
2 dst sp coconut oil,
2 whole red chillies (broken into bits),
1 tsp mustard,
2 small onions chopped,
Handful curry leaves,
2 tsps tamarind paste
How to prepare Vegetable Pulingari :
Heat a little oil in a fry pan. Fry the freshly grated coconut, when they turn slightly brown, add red chilli powder, dhaniya powder, and fenugreek seeds and mix well. Stir till the powders lose their raw smell.
Remove from the stove and cool. When cool grind it to a fine paste and keep aside.
Put in all the cut vegetables in a pan with enough water to cook them tender.
Add the tamarind paste and the ground coconut masala paste in to pan with the cooked vegetables.
As soon as the curry comes to boil simmer and cover for about 2-3 minutes..
Temper the curry with whole red chillies, mustard and curry leaves in a little oil and pour over.
Serve it hot with rice.
Points to Note:
While using tamarind you can add according to your taste. We like it a little hot and sour. So adjust the tamarind paste as per your taste.
