Carrots and Springonion masala, a delicious side dish

Ingredients needed for Carrots and Springonion Masala:
2 bunches spring onions (chopped),
2 medium sized carrots (cubed),
2 tbsp oil,
pepper to taste,
2 tsp Thai red curry paste
2 tbsp chili sauce,
1/4 cup grated coconut,
1/2 cumin seeds,
3-4 curry leaves,
1 tbsp coriander leaves,
2 tbsp curds,
Salt to taste.

How to prepare Carrots and Springonion Masala:
Dice the carrots and chop the spring onions.
Heat oil in a pan, sauté the curry leaves, cumin seeds, add in the carrots, spring onions, Thai red curry paste, a little water, grated coconut, salt to taste, and simmer for 4-6 minutes.
Add in the curd and mix well.
Open, add in chilli sauce and coriander leaves to garnish.
Serve hot with hot puris/ luchies/ bread.

Points to Note
You can also try out a variation, with mushroom, corn, paneer, in the same recipe instead of Carrots.
