Mutton Kola Urundai, a chettinadu style kofta recipe

Ingredients needed for Mutton Kola Urundai / Koftas1 cup minced mutton
2 Green chillies
3 Red chillies
1 tbsp Roasted grams / Pottukadalai
4 Cashew nuts
1 tsp Sauf / Fennel seed
2 tbsps freshly rated coconut
5-6 small onions
6 garlic flakes
1 tsp chopped ginger
1 big black Cardamom
2-3 Cloves
1” piece Cinnamon
handful of curry leaves
1 Egg



How to prepare Mutton Kola Urundai / Koftas Tamil Nadu style Heat one tablespoon oil in a fry pan, add the cinnamon, clove, cardamom and the red chillies.
Then, add  curry leaves, saunf, ginger, onion, green chilies and garlic one after the other and saute well.
As the vegetables starts getting golden, add the roasted grams / pottukadalai, cashew nuts and grated coconut. Stir well and fry till the coconut turns golden.
Grind all the fried ingredients together to a smooth paste and keep aside. Sprinkle a little water if needed.
MIx the beaten egg to the masala paste as well as the minced meat. Mix well. Shape into round balls and deep fry in hot oil. Drain and remove from fire.
Serve with Tomato Sauce / Ketchup.

Points to NoteUsually the minced meat is added raw in the recipe. If you have doubts about the cooking of the meat , you can saute the meat first and then add to the masala paste.
You can also precook the meat separately but the taste will be different as you might have to leave out the extra juices.  
While you fry the Kola balls see that the oil is not smoking. If the oil is too hot, the balls will brown quickly on the outside but will remain uncooked in the centre. The kola balls should be fried in medium fire or better still simmer every now and then if you feel the oil is getting too hot.

Grated Paneer Sandwich


Ingredients needed for Paneer Sandwich
1 Bread loaf about 400 grams
1/2 cup grated Paneer (Cottage Cheese)
1 Tomato, chopped fine
1 Onion, chopped
2 Green chillies, minced
1/4 tsp Red chilli powder
Salt to taste
Butter as needed / to your taste

How to make Paneer Sandwich :
Chop onions, chillies and tomatoes.
Mix the grated paneer with chopped vegetables, salt, red chilli powder and keep aside.
Take two bread slices and butter them, put some paneer mixture on one slice and cover it with other bread slice.
Put this in sandwich toaster until the bread turns crispy and brown.
Serve with ketchup.

How to prepare soft and fluffy Appams, Kerala style?



Ingredients needed for preparing Appams Kerala style 
4 cups Raw rice
1 cup  rice cooked
2 cups freshly grated Coconut
1/2 cup Coconut water
1/2 tsp Dry yeast
Warm Milk – ½ cup
3 tbsps Sugar
Salt to taste

How to prepare Appams, Kerala style? 
Clean and soak the rice for 4-5 hrs.
Grind  raw rice, cooked rice, coconut water and grated coconut together in a mixer / grinder to a smooth batter of dosa consistency.
In the mean time mix the yeast, 2 tbsp sugar in the warm milk and keep aside after 15 mins. The yeast will rise.
Mix the yeast mixture to the batterleave it to rise.
Before making appams, add salt to taste and sugar if needed. Stir well.
Heat a non-stick appachatti. Brush a little oil with a cloth.
Pour one big spoon of the batter into the appa chatti, rotate the pan gently holding it with both hands. Then close with lid.
When you see the steam coming out on the sides of the pan,, open the lid and remove appam.
Follow the same procedure till you finish the batter.
Serve hot.

Points to Note
You can serve appams with chicken stew / curry, vegetable / potato stew, or any other spicy curry you fancy.

Tasty and easy to prepare snack Egg Frankies, kerala style recipe

Ingredients needed for tasty Egg Frankies
2 tsps of oil
1 cup onions chopped
1 cup chopped capsicum
1 cup chopped carrot
1/2 cup chopped coriander leaves
Salt to taste
1 tsp pepper powder
3 tsps chat masala
3 eggs
2 cups atta / whole wheat powder

How to prepare tasty Egg Frankies?
Add just enough water and salt to taste to the Whole wheat powder / atta . Mix well to prepare a soft pliable dough. keep aside for 15 to 20 minutes.
Divide and shape the dough in to small balls. Roll them into chappathies.
Meanwhile, heat oil in a pan. Saute onions, chopped vegetables and mix well.
When half done add salt to taste, pepper powder and chat masala. Mix well and keep aside.
Beat the 3 eggs nicely with 2 small pinches of salt.  Keep aside.
Heat the Tava, put in one of the rolled chappathies. Cook it for half a minute on one side and flip it to cook the other side.
Then spread the beaten egg thickly on to one side of the cooked chappathy and turn it over to cook it well.
Again flip it over so that the side with egg comes on top.
Spread the prepared filling and roll it  to prepare your tasty and yummy as well as easy to prepare Egg Frankie.
Try this out , it is really a tasty and delicious evening teatime snack as well as a filling one.

Aloo / Potato stuffed Bonda, hot snack for the rainy days


Ingredients needed for the Aloo /Potato Bonda 
1 onion, chopped fine
2 cups potato boiled and mashed
1 1/2 cups peas and carrots
2 big Green chilies chopped finely
1 teaspoon Lemon juice
1 cup Gram flour
1/2 tsp Mustard seeds
1/4 tsp Turmeric powder
1/2 tsp Baking powder ( optional )
1/4" piece ginger chopped finely
1 small bunch coriander leaves chopped finely
Salt to taste ( about 2 small tsps )
Oil for deep frying

How to prepare the batter for Bonda
Blend the ingredients Besan / Gramflour, 2 tbspful oil, 1/2 tsp salt  and enough water about alittle more than 1/2 cup. The batter should be of the pouring consistency, like an Idli/ Dosa Batter.

How to prepare the filling for Bonda
Mix mashed potatoes, salt with a half cup of hot water and keep aside.
Hear 2 tbsps of oil, splutter mustard seeds. Add chopped onions, green chillies, ginger and fry till the onions get golden brown.
Add the chopped vegetables and stir well. Cook in simmer flame till the vegetables are tender.
Add the potato mix and chopped coriander leaves to this. Mix well.
Remove from fire and cool.
Now, shape the potato filling in to small balls , roll them in the batter and deep fry in hot oil till they are golden .
Drain and leave it in the kitchen towel to remove the excess oil.

Points to Note
You should be able to roll the balls in the batter and deep fry in oil. Add a little more water if required to get the batter to the right consistency if you are not able to roll the ball in the batter

Chicken rolls / Frankies a delicious snack for the teatime


Ingredients needed for the Chicken Filling used in the rolls
1/2 kilo chicken
250 grams onions sliced
Salt to taste
Pepper to taste
Handful coriander leaves
2 tsps crushed green chillies
1/2 tsp ginger crushed
2 tsps garlic paste
1 tbsp garam masala powder
Maida as needed, for the paste
oil for deep frying the rolls

Ingredients needed for the batter 
2 cups maida
1 egg well beaten
Water as needed to prepare a batter
Salt to taste

How to prepare Chicken Roll? 
To prepare the filling: 
Cook chicken with salt and pepper, when done remove the bones and shred the chicken into small pieces
Heat oil, saute onions to a golden colour.
Add salt to taste, pepper to taste, ginger, green chillies and garlic  and the coriander leaves  and saute well.
When all the ingredients blend together add the chopped chicken pieces nd the garam masala powder.
Mix well , remove and keep aside.
To prepare the rolls:  
Mix maida, egg and salt to taste to a smooth batter by adding enough water. The batter should be of the Dosa consistency. Prepare 6" diameter dosas on the tava, keep aside.
Stuff each dosa with the filling and roll them. Fold in, at the ends and seal them with the prepared  maida and water paste.
Heat oil in a deep frying pan and fry them to a golden brown colour.
Serve with sauce / ketchup.  

Delicious and Crispy Paneer Pakoras, a snack recipe


Ingredients needed for delicious and crispy Paneer  Pakoras
1 cup Paneer cubed
1 cup besan
2 tsps oil
Salt to Taste
1 tsp red chilli powder
1-2 green chillies chopped
handful curry leaves chopped
Water as needed  to get the batter to the right consistency
1 pinch asafoetida

How to prepare Paneer Pakoras?
Mix all the ingredients except Paneer pieces  together. Beat well to make the batter fluffier and let it rest for about half an hour.
Sprinkle salt and red chilli powder over the paneer pieces and keep aside.
Heat oil in a kadai  for deep frying the pakoras.
Dip the Paneer piece in to the batter and drop them in to the hot oil.
As they get golden remove from the hot oil with slotted spoons  on to the kitchen towels / napkins.
Once the extra oil is drained off, serve either with Tomato sauce or ketchup.
You can serve these Paneer Pakoras as starters or finger snacks with toothpicks  and a small bowl of ketchup or chutney in the middle.

Fish cutlets, an hyderabadi style recipe


Ingredients needed for Fish cutlets:
4 fillets of white fish
1 tsp ginger paste
1 tsp garlic paste
1 bread slice, soaked in water and squeezed dry
1 tbsp cornflour
1 egg beaten
½ tsp garam masala powder
1 cup bread crumbs
1-2 green chillies, chopped
1 bunch coriander leaves, chopped
salt to taste
oil for frying
2 pinches of turmeric powder

How to prepare Fish Cutlets
Rub fish with salt and turmeric powder. After 5 minutes wash the fish pieces and keep aside.
Steam fish over a pan of hot water and remove all the bones.
Mash the fish pieces with your fingers. Add ginger- garlic paste, salt, red chilli powder, garam masala powder, cornflour, coriander leaves, green chillies and the bread slice.
Mix all these ingredients together to form a dough. Take small balls out of the dough and shape cutlets in the way you like, long, oval or round.
Dip each cutlet in beaten egg and then roll in a plate of bread crumbs.
Heat oil. See that the oil is not very hot as the cutlets will crumble.
Fry till they are golden brown and serve with tomato sauce / ketchup.

Tasty and Filling Chilly Paneer Masala Dosa

Ingredients needed for Chilly Panneer Dosa
2 cups dosa batter
1/2 cup butter
1 cup chopped onions
1 cup shredded cabbage
1 cup chopped tomatoes
1 cup sliced capsicum
1 tsp finely chopped green chillies
Tomato sauce as needed
1/2 cupChilli-garlic sauce
2 tsps soy sauce
2 tsp chilli powder
2 tsps garam masala
1 cup chopped paneer  / cottage cheese
4 tbsp finely chopped spring onions, only green leaves
salt to taste

For Serving  Chilly Paneer Dosa
coconut chutney
green garlic (lehsun) chutney
sambhar

How to prepare  the filling for the Chilly Paneer Dosa?
Heat 3 tbspfuls of the butter in a non stick kadai. Put in onions, cbbage, tomatoes, capsicum. green chillies, chilli powder, garam masala and mix well.
Cover and cook for 3-4 minutes.
Remove the lid, add salt to taste, Tomato sauce, Chilli sauce, Soya Sauce and mix well. Add copped panneer  to this.
Mix and remove from fire, add the chopped spring onions leaves.

How to prepare and serve Chilly Panneer Dosa?
Make a dosa with the Dosa batter. Use butter instead of oil.
Spread the batter, put in the filling, cover for a minute and then fold just like you do with Masala Dosa.
Serve hot with Coconut chutney/ Green garlic Chutney and Sambhar.

Golden Mushroom Balls as an evening snack

Ingredients needed for the Golden Mushroom Balls
1 potato medium sized
1 cup Maida
Salt to taste  ( 1/4 tsp)
1/2 cup vanaspati / oil

Filling for the Golden Mushroom Balls
2 tbsps oil
1 tbsp crushed Garlic
1 cup Onion chopped
4 cups chopped mushrooms
2 tbsp Celery chopped
2 tbsp spring onion chopped
Salt to taste
1 1/2 tsp Pepper powder
3 tbsp grated cheese
1 egg yolk

How to prepare Golden Mushroom Balls?
Boil potato nicely and mash well.
Add salt to Maida , sieve. Keep aside.
Add vanaspathi to the Maida and mix well with your fingers.
Add mashed potato and salt to this. Prepare a dough and keep aside.
Preheat the oven to 350*C.
Heat oil in a pan, add crushed garlic and fry.
As the garlic starts changing colour add chopped onions. Saute well.
Add the chopped mushroom and fry till the water gets dry. Add chopped spring onion and celery to this and mix well.
Add salt and pepper powder. When it comes to a thick mix  remove from the stove  and add grated cheese.
The filling is ready.
Now shape the maida potato mix in to small balls.
Shape each ball in to a small poori, add a little of the filling and shape them again into rounds or ovals.
Brush them with the beaten yolk  and bake them till the balls get golden.

Tasty Kara Dosa Recipe

Ingredients needed for Kara Dosa
1 cup Raw rice
1/2 cup Tuar Dal / Masoor Dal
1 cup Fresh coconut
6 dry red chillies
1/2 tsp asafoetida powder
Salt to taste
Oil

How to prepare tasty Kara Dosa at home?
Clean, soak the dal and the rice together, at least for about 2 hours
Grind the dal and the rice to a batter  adding the coconut, red chillies, asafoetida and salt to taste.
Add water if needed to bring the batter to the right consistency.
Heat the tawa. Check if it is ht by sprinkling a little water. When it splutters , pour a spoonful batter and spread  like a thin dosa.
Smear a little oil and flip when the side gets cooked. When both sides are cooked and the Dosa gets golden coloured remover
Serve  hot with chutney.

Recipe for the Mushroom Fry



Ingredients needed for the recipe of Mushroom fry
500 grams of Mushrooms
1/2 cup bread crumbs
oil for deep frying
3 -4 tbsps corn flour
2 tbsps pepper powder
2 tbsps rice flour
salt to taste

How to prepare Mushroom Fry Recipe
Mix rice flour, corn flour, pepper powder and salt to taste to form a smooth batter with a consistency of a thin paste.
Cut the mushrooms in to quarters, keep aside.
Dip these mushroom pieces in the batter  and roll in the breadcrumbs.
Repeat the same process for all the mushrooms and refrigerate for atleast  an hour.
Heat oil in a kadai / deep fry pan.
Deep fry the mushroom pieces  to a golden colour.
Serve hot with Sauce / Ketchup.

Points to Note while making Mushroom Fry
If you have uniformly sized small button mushrooms, you need not cut or queters. Keep them whole and follow the recipe.
This can be served as a finger food with drinks and cocktails or as starters in a party. .

Karikku Appam / Ilaneer Appam, a Kerala Recipe

Karikku / Ilaneer is the malayalam word for the tender coconut, which are very nutritious. You can use the little flesh the coconuts have with the water while grinding the rice for the recipe.


Ingredients needed for Karikku Appam /Ilaneer appam
1 tender coconut
1 cup raw rice
2 tsps sugar
1/2 tsp green cardamom powder
Salt to taste
water as required (optional)

How to prepare Karikku Appam
Clean, wash and soak rice for 4 hours.
Grind the flesh of the tender coconut and the water to gether  in a mixer.  Add sugar to it and blend well.
Add soaked rice to this mixture in thr grinder bowl little by little.
If needed you can add a little water also.
Keep the mix aside for about 6 hours with out mixing or moving the batter.
After that add salt to taste and the green cardamom powder.
Heat a Dosa tava, pour a ladle of the batter on the tava and spread it a little. The Appam should be slightly thicker than the Dosa.
Cover and cook for a minute. Remove when done and serve with a spicy curry.

Points to Note:
You can grind the thin flesh of the tender coconut while grinding for the batter.
Extra water will not be necessary since you are using the tender coconut water.
If the coconutwater is not enough and the batter is very thick you can add a little plain water.

Mathi / Sardines Bhajji a snack recipe

Ingredients needed for the Mathi / Sardines Bhajji
10 numbers Sardines ( Mathi)
1 cup Besan
2 tbsp rice flour
1 onion
1 small piece ginger
3 green chillies
1-2 stalks curry leaves
1 tbsp coriander leaves
1/4 tysp turmeric powder
Salt to Taste
Oil for frying

How to prepare the fish for Bhajjis;
Clean, wash and slash mathi meen with a sharp knife across in two or thre places  and keep aside
Mix into a paste, 2 tsps of chilli powder 1/4 tsp turmeric powder and salt to taste with a little water. Apply this paste all over the fish and keepaside for 10 minutes.
Then fry the fish slightly, do not allow the fish to get crispy.

How to prepare the batter for the fish bhajji 
Mince / finely chop onion, ginger, green chillies, curry leaves  and coriander leaves nicely. Mix besan flour and riceflour together with chilli powder and turmeric powder well.
Add the minced onion, green chillies,ginger, curry leaves and coriander leaves witha little salt and water to the consistency of the Bhajji Batter / Idli batter.

How to prepare fish Bhajjis
Dip the fried fish in this mix ad deep fry in oil till they are golden brown.
Serve with tomato ketch up or sauce.

Points to note:
You are not supposed to fry the fish crispy when you first shallow fry in oil.
Just before you dip the fish in the batter remove the extra bones or just trim them clean.
Serve them as an appetizer / starter or as a side dish for a party / cocktails
If you like you can cut into small pieces and then fry so as to be able to eat with a tooth pick.

A tasty snack, Cheese Toast Recipe

This is an easily prepared evening Tea time snacks. This can also be packed as a snack in the lunch box for kids but adjust the chillies  /  spice according to the kid's age and taste.


Ingredients needed for Cheese toast
6 slices of bread
2 eggs
1/2 cup cheese grated
1 tbsp cornflour
1 tbsp onions chopped fine
1/2 tsp green chillies chopped
1 tsp coriander leaves
1/2 tsp chilli powder
1 1/2 tbsp butter
a pinch baking poder
Salt to taste
1 1/2 tbsp sesame seeds / white Til
oil as requird

How to prepare the Cheese Toast
Preheat the oven to get about 180* C.
Whisk egg yolk nicely till it froths up.Add cornflour and salt to taste and beat again till they get a soft texture.
Beat in butter and mix nicely.
Now add chopped onion, green chillies, chilli powder, coriander leaves and baking powder. Mix well. Keep aside.
Trim the ends of the bread slices and cut them diagonally to get six triangles altogether.
Beat the white of the egg separately. Keep aside.
Keep the prepared cheese filling on one side of the bread slice and brush the egg white over that.
Toast the till seeds and sprinkle some on the bread piece.

Points to Note:
You can also deep fry the bread pieces with the fillings to a golden colour if you do not mind the oil content.
This is an easy recipe to follow when you have unexpected guests at the tea time and also for the kids who come home hungry from school.

Recipe for simple and spicy sausages with Bafat Powder

I am not a manglorean but I have heard of Bafat powder.  I was looking out for that recipe from the day I had heard about it.
Today while searching somethig else I stumbled upon Tina's blog.  Thanks Tina for the recipe.
I have used the same amount of measurements that Tina has used. It came out very nice. Thank you.

Ingredients needed for Bafat Powder
2 1/2 kg long red chillies
1/2 kg short red chillies
250 gms corainder seeds
150 gms cumin seeds
50 gms mustard seeds
50 gms black peppercorns
50 gms turmeric
50 gms cloves & cinnamon

How to prepare the Bafat powder
You can sun dry all ingredients for 3-4 days  and then grind them into a powder. Store in an airtight container.  I am giving you a simple recipe with this Bafat Powder as a start you off.

Ingredients needed for Spicy Sausages
1 small packet of chicken sausages
2 tsps Bafat powder
1/2  - 1 cup fresh curds /  as needed to prepare the mix
Salt to taste
oil for shallow frying

How to prepare the sausages
Mix all the ingredients together and marinate for an hour.
Heat oil in a non stick fry pan, shallow fry the marinated sausages.
Serve as a side dish or a starter, garnished with lemon wedges.

Crispy and Delicious Rava Dosa

Ingredients needed for Rava Dosa:
1 cup Sooji / Rava ( roasted )
1 cup Maida
1/2 cup Idli / Dosa batter
2 tbsps of beaten curds
2 green chillies, chopped
handful curry leaves, chopped
1/2 tsp jeera powder
a pinch asafoetida
Salt to taste

How to prepare Rava Dosa:
Mix Sooji, maida and the Idli batter with a little water and beaten curds without any lumps.
The consistency should be somewhat watery than the usual dosa batter.
Add salt to taste, jeera powder, asafoetida, chopped green chillies and curry leaves.
Mix well and keep aside for at least half an hour. The water should be a little above the batter level.
Heat a griddle, mix the batter well.
When the griddle gets hot, pour the batter through the outer rim and then bring it to the centre.
Spread the batter in to a round shape so that it is of uniform thickness. Pour a spoonful oil around the dosa to get it crispier.
Flip the dosa onto the other side to get the side also cooked.
Remove and serve hot, with chutney.

Aval Uppuma, an evening tea time snack

Ingredients needed for Aval Uppuma::
1 cup Aval ( Rice Beaten flakes)
Salt to taste
2 tbsps fresh grated coconut

Ingredients for seasoning:
1 tsp oil
1/ tsp mustard seeds
2 red chillies broken into bits
1/2 tsp split urad dal / ulutham paruppu
a pinch asafoetida

How to prepare the Aval Uppuma:
Clean the aval and remove the husk of the paddy and small stones if there are any.
Wash with water three times and drain out th water. Add salt and keep aside.
Heat oil in  a fry pan, non stick would be preferable, as it will need only a little oil.
Splutter mustard seeds, add urad dal, red chillies, asafoetida and curry leaves and fry till golden.
Now add the washed and drained aval to the pan.Stir it well, add the fresh  grated cocunut.
Mix well and remove from fire. Cover it and leave for about 5 minutes for the flavours to blend together.
Aval Uppuma is ready to serve.

Points to note:
You can use chopped onions and green chillies instead of fresh coconut.

Morappams - an ideal evening snack

This is one of the famous Kerala evening snack recipes. We always have remaining Idli Dosa batter which will get a little sour in the afternoon. Nowadays we have refrigerator to store the batter. When the refrigerators were not there, the batter used to get sour and unusable for the next day. So to use the old batter, elders at home used this recipe. You can make these morappams with fresh batter too.
You will have to have a Unniappa chatti / Paniyara chatti to make these morappams.

Ingredients needed for Morappam
2 cups of Idli / Dosa batter ( slightly sour )
3 green chillies minced nicely
1 tsp grated ginger
2 tbsps finely chopped coconut pieces
2 tbsps Semolina  / Rava
a pinch asafoetida
salt to taste ( Remember that the batter has salt already )
1/2 tsp mustard seeds
1 tsp Bengal Gram dhal / Kadala Paruppu
oil for frying
2 tbsps chopped curry leaves

How to make Morappam
Heat a tsp of oil in a frying pan, add mustard seeds and splutter. Add channa dal / Kadala paruppu and fry till they are golden. Pour into the Idli batter.
Then add all the chopped ingredients to the batter and mix well.
Heat the Paniyara chatti, pour oil into the provided holes in the chatti. Then pour a spoonful batter into the holes till they are half full. The oil should cover the appams as you pour the batter.
When they are golden use a small skewer to flip the appams in the pan.
Serve just like that, if needed you can serve a coriander Chutney / Mint Chutney.

Points to Note:
This will make one good evening tea time snack.
You can make this in a jiffy if you have unexpected guests at home.
If you do not have idli batter with you , you can get good packets over the counter from the Supermarkets.
