Mushroom / Croon stew, a Kerala style recipe

Ingredients needed for Mushroom / Croon stew
250 grams mushrooms
1 onion sliced fine
1 piece ginger chopped
5 green  chillies slit
1/2 tsp coriander powder
2 flakes garlic
1 tsp garam Masala (cinnamon, cloves, cardamom and pepper  altogether crushed )
Handful coriander leaves, chopped
1 tsp coconut oil
2 cups coconut milk
2 stalks curry leaves
salt to taste

How to prepare Mushroom stew?
Take a fry pan, add 1/2 a cup each of coconut milk and water.
Add onions, ginger, garlic, coriander powder, coriander leaves, green chillies, whole garam masala crushed, coconut oil and  the cleaned cleaned mushrooms. Cook till the mushrooms are cooked.
Add the rest of the coconut milk, and curry leaves. As it starts boiling, remove from fire.
Garnish with a little more chopped coriander leaves and serve.

Recipe for the Mushroom Fry



Ingredients needed for the recipe of Mushroom fry
500 grams of Mushrooms
1/2 cup bread crumbs
oil for deep frying
3 -4 tbsps corn flour
2 tbsps pepper powder
2 tbsps rice flour
salt to taste

How to prepare Mushroom Fry Recipe
Mix rice flour, corn flour, pepper powder and salt to taste to form a smooth batter with a consistency of a thin paste.
Cut the mushrooms in to quarters, keep aside.
Dip these mushroom pieces in the batter  and roll in the breadcrumbs.
Repeat the same process for all the mushrooms and refrigerate for atleast  an hour.
Heat oil in a kadai / deep fry pan.
Deep fry the mushroom pieces  to a golden colour.
Serve hot with Sauce / Ketchup.

Points to Note while making Mushroom Fry
If you have uniformly sized small button mushrooms, you need not cut or queters. Keep them whole and follow the recipe.
This can be served as a finger food with drinks and cocktails or as starters in a party. .

Recipe for the Button Mushroom Masala

Ingredients needed for the Button Mushroom Masala
1 packet or about 200 grams  of mushrooms , quartered
1 medium sized onion  finely chopped
2 tsp ginger garlic paste
3 green chillies cut into bits
1/2 tsp pepper powder  or fresh ground
a pinch of turmeric
a pinch of garam masala
1/2 tsp dry mint powdered  
1 tsp fenugreek  powder
1 tsp cream
lime juice 1 tsp
oil  as required ( about 1-2 tbsp)
salt to taste.

How to prepare Mushroom Masala 
Heat oil in a fry pan, add chopped onions and green chillies, fry till they are golden.
Add ginger garlic paste , saute for a minute or two.
Add turmeric powder, garam masala powder, dry mint powder and fenugreek powder. Saute for about a minute.
Now add the mushroom, cover and simmer till the mushrooms get cooked.
Add salt to taste, crushed pepper, mix well.
Add the cream and bring the gravy to boil.
Add lime juice and remove from fire. Keep covered until ready to eat.
Serve as a side dish to Plain rice or Chappathies

Mushroom Roast Recipe

 Ingredients needed for Mushroom Roast Recipe
 2 cups  mushrooms
2 cups chopped onions
5 green chillies chopped
1 tbsp chopped ginger
1 cup chopped tomatoes
2 tsps coriander powder
1 tsp chilli powder1/2 tsp turmeric powder
1 tsp garlic chopped
2 tsps garam masala powder
1 tbsp chopped coriander leaves
Salt to taste
1 tbsp oil

How to prepare Mushroom Roast:
Wash and clean mushrooms and then cut them into cubes, if they are button mushrooms keep them whole.
Heat oil in a fry pan. Add mushrooms, saute till they are golden, remove and keep aside.
In the remaining oil, add chopped onions, garlic, ginger and green chillies, saute till they are golden.
Add salt, turmeric powder,chilli powder and coriander powder, saute for a minute.
Add chopped tomato, cook till they become pulpy.
Add half a cup of water to bring into a thick curry / gravy consistency.
Add the sauteed Mushrooms, simmer till the ingredients blend well.
Garnish with the chopped coriander leaves.
Serve with Roti's. Naans and also as a side dish with Plain Rice.

Points to Note:
There are good and bad mushrooms and  for some mushrooms are allergic.

Mushroom Masala, a side dish for parathas and pooris

Ingredients needed for Mushroom Masala:
1 cup boiled and chopped mushrooms,
1 cup onions, chopped
1 cup tomatoes, chopped
1 tsp ginger-garlic paste
1 tsp chilli powder,
1 tsp salt,
½ tsp turmeric powder,
1 tsp coriander powder,
1 tsp garam masala,
100 grams oil,
Small quantity of ginger, green chilli and coriander leaves,
2 tbsp tomato ketchup.

How to prepare Mushroom Masala:
Heat oil in a fry pan and add chopped onions.
Fry onions till they become golden. Add chopped ginger, tomatoes and mushrooms and mix well.
Add chilli powder, coriander powder turmeric powder and salt to taste.
Mix well and cook till the tomatoes get nicely cooked and pulpy.
Add tomato ketchup and mix well.
Add green coriander, green chillies and garam masala.
Simmer and cover for a  minute.
Serve hot.

Points to note:
If you like you can keep the mushrooms whole, particularly if you are using this as a side dish with plain rice or pulaos.
It would be nice if you chop them and cook if you are using it for roti's and parathas.
Mushrooms should be cleaned well in running tap water, since you can find dirt in them.
