Potato Brinjal Fry Recipe

Ingredients needed for the Potato Brinjal Fry Recipe

1 cup cubed Potatoes
2-3 small purple Brinjals, quartered (1" cubes)
1/2 cup Onion, sliced
2 flakes Garlic chopped
1 stalk curry leaves
1/4 tsp turmeric powder
1 tsp Chilly flakes
Salt to taste
2 tbsps oil

How to prepare the Potatos Brinjal Fry
Peel, wash and cut the potatoes. Keep them immersed in water.
Heat oil in a non-stick pan.
Fry the onions, garlic and curry leaves for a minute.
Add the turmeric powder and chilly flakes to the onions and mix well.
Drain the potatoes off the water and add them to the pan. No extra water os needed for the potatoes to cook. Add salt and mix well.
Cover, simmer and cook stirring now and then till the potatoes are half cooked.
Add the brinjal pieces to the frypan. Mix well, simmer and cover. Cook till done.
If you like, you can garnish with chopped curry leaves and coriander leaves .
Serve with anything you fancy, be it Rotis, Pooris, Rice anything. Potato Brinjal Fry is a perfect side dish.
