Tomato Sabzi / Tomato Gravy Recipe

Tomato Sabzi is one easy recipe, which goes very well with almost all main dishes even for breakfast items like Idli, Dosa, Poori etc. You can make this also in a jiffy if you have some unexpected guest at home.

Ingredients needed for Tomato Sabzi:
 2-3 cups of chopped  tomatoes
1 cup onion, chopped
2 to 3 tbsp oil
1 tsp mustard seeds
1 tsp jeera / cumin seeds
1 sprig curry leaves
1 - 2 tbsp fresh cream
1-2 green chillies, slit
1 tsp finely chopped ginger
1 tsp garlic finely chopped
2-3 tsp chilli powder as per taste
2 -3 tbsp pea nuts (roasted and coarsely pounded)
1 tsp kasuri methi
salt to taste
chopped coriander leaves for garnishing

How to prepare Tomato Sabzi
Heat oil in a fry pan and splutter mustard seeds.
Add jeera, chopped ginger, chopped garlic, slit chillies and the curry leaves.
When they turn golden add the chopped onions.
As the onions turn trasparent add the chopped tomatoes, salt and the chilli powder.
When half done add the cream and cook till the gravy turns thicker and the tomatoeas are pulpy.
Add the kasuri methi and the powdered ground nuts and a tea spoon of jaggery or sugar.
Simmer for 2 to 3 minutes and garnish with coriander leaves.
Serve hot with Indian Breads / Idli and Dosa as a side dish
