Fish Cutlet Recipe

Ingredients needed for making fish cutlets:
500 grams fish boneless ( shark preferred, seer / salmon can also be used )
3 Onions chopped fine
1 tbsp minced ginger
6 flakes of garlice minced
1/2 tsp Garam masala
1 tsp Roasted Cumin powder
1/4 cup Bread Crumbs
2 Eggs
Salt to taste
Oil as needed for shallow frying.

How to prepare fish cutlets:
Mince the onion, ginger and garlic together.
Clean, wash and cook the fish with very little water. Remove the skin the bones and shred them.
Add the onion-ginger-garlic mixture, breadcrumbs, garam masala, well-beaten eggs, salt and cumin powder to the shredded fish.
Mix nicely with your hand, well enough to make a homogeneous mixture. Make lime sized balls out of the mixture and flatten them lightly in to round or oval shapes.
Heat 2 tbs of oil in a shallow frying pan and fry few at a time until both sides become golden brown (turn it once).
Repeat this until all the cutlets are fried Add oil every time you remove one set of cutlets from the pan). Serve hot.

Points to Note:
While shallow frying the oil should be very hot but do not let the oil to get smoking hot. If you do the outside will get cooked soon and might get burnt but the insides will be uncooked ,
It would be better if you can get the ingredients onion, ginger and garlic minced nicely and not chopped. If the onions are bigger and does not mix well with the fish, the cutlets might break and will not retain the shape after frying.
