Potato Stew

Ingredients needed for potato Stew:
1 cups peeled and cubed potatoes
1 cup onion cubed
2-3 green chillies
3 garlic flakes (Optional)
1 tsp chopped ginger
Handful curry leaves
Salt to taste
2 cups coconut milk ( at least 1 cup should be thick)

How to prepare Potato Stew:
Take a sauce pan and add Potatoes, Onions, Green chillies cut into two, Ginger pieces, Garlic ( if you are adding them ) to it. Add the thin coconut milk with salt to taste.
Cook till the potatoes and onions get soft. Just mash one or two pieces of Potatoes to thicken the gravy of Stew.
Add curry leaves and the first coconut milk. When it starts boiling remove and add coconut oil to the stew Mix well. Serve hot with Appam, Idlis and Puris.

Points to Note:
If you are using the coconut milk from cartons, take one cup and keep it aside as thick milk. Add 1 cup of water to the remaining milk and make it thin. Cook with this thin milk and then add thick milk.
