Neichoru / Ghee Rice a Kerala Reciperecipe

Ingredients needed for Neichoru / Ghee rice
2 cups Basmathi Rice
1/2 cup ghee
1 tbsp raisins
1 tbsp cashew nuts
1 1.2 cups onions sliced fine
3 " pieces cinnamon
5 green cardamoms
6 cloves
Salt to taste
2 cups hot water
1 tbsp lime juice
1/4 tsp garam masala powder

How to prepare Neichoru / Ghee Rice a kerala recipe:
Wash, clean and soak rice for 15 minutes.
In a pressure pan, heat ghee, fry cashew nuts and raisins to a golden colour,  remove and keep aside.
Fry the sliced onion to a golden color, remove half of them from the pan and keep aside.
Mix fried nuts and raisins to the other half the onions remaining  in the pan, cover and keep aside.
Heat the remaining oil / ghee, fry cinnamon, cloves and cardamoms, add soaked and drained rice, 4 cups hot water and the remaining half of the fried onions with salt to taste
When it is boiling nicely, add lime juice and garam masala powder.
Simmer till the rice gets done.
Garnish with the fried onions, raisins and nuts mixture.
Serve hot with Spicy mutton Curry / Chicken Pepper fry
