The recipe of Mint Chicken

Ingredients needed for Mint Chicken:

1 whole chicken
3 tsps dried & powdered mint leaves / fresh mint leaves ground to a paste
1 tsp pepper corns
5-6 green cardamoms
3 pieces cinnamom
4 cloves
2 tbsps vinegar
Salt to taste
oil as needed (about 2 tbsps or more)

How to prepare Mint Chicken.:
Clean, wash and dry the chicken with a kitchen towel. Keep aside.
Powder Peppercorns, cinnamon, cloves and cardamoms and mix with the salt and mint powder / paste.
Add vinegar to make a thick and smooth paste.
Apply the mix into the chicken and see that the chicken is coated nicely with the paste.
Tie the legs up with the neck of the chicken with a thread.
Soak it at least for 8 hours or better still overnight.
Cook in the oven at 375*F for 5 minutes or till the chicken gets tender. Then grill the chicken in a grill or in a microwave.
Cover with foil and leave it for sometime before you vut the chicken into pieces.
Serve with Pudhina Chutney or Pudhina Sauce
