Rajma Masala with Vegetables

Ingredients needed for Rajma Masala with vegetables
2 cups Rajma (kidney beans),
2 cups mixed vegetables like carrots, capsicums, sprouts etc
2 cups coconut milk,
2 tbsps oil,
1/2 tsp garlic paste
1/2 tsp green chilli paste,
1 tbsp curry masala powder,
1 tbsp cashew paste,
1/2 cup tomato puree,
1 tsp garam masala powder,
salt to taste,
1 tbsp coriander leaves chopped,
to serve with paprika bread

Hoow to prepare Rajma Masala with Vegetables 
Soak the rajma overnight and pressure cook for 20 minutes, in simmer after the first whistle or  for 4 whistles, till tender.Keep aside.

For the masala gravy;
Heat oil in a frying pan, saute ginger, garlic, green chilli paste, curry masala powder, garam masala powder, tomato puree and cashew paste.
Sprinkle a little water to see that the masala does not stick at the bottom.
Add in the cooked rajma, carrots, capsium, sprouts. Mix well.
Add in thick coconut milk, simmer and cook till all the masalas blend well and the gravy is thick.
Serve hot garnished with chopped coriander leaves and lemon wedges.

Chef's Variation: Try similar variation with assorted non-veg ingredients, like, fish, prawns, lobster meat etc.
