Kali dal, an heavenly side dish for Rotis and Naans
Ingredients needed for the tasty Kali dal
1 cup Whole Black Urad with skin
1" piece ginger, chopped
12 flakes garlic, chopped
Salt to taste
2 - 3 tbsps butter / ghee
Green chilli, slit, optional
Garam Masala / Cumin powder, as per taste
1/4 tsp turmeric powder
How to cook Kali Dal
Clean and wash Urad dal. Soak for an hour or two.
In a pressure pan, add the dal and enough water to cook the dal along with turmeric powder, salt to taste, half the chopped ginger and chopped garlic. Mix well and pressure cook for about 15 minutes after the first whistle.
Let cool and then open the pressure pan. Put the open pan on the simmer flame, mash the contents now and then adding a little water if needed. The dal sghpould come to the creamy consistency.
Heat the butter / ghee in a fry pan. Fry onions, remaining ginger and slit green chilli to a golden brown colour. Add cumin seeds / powder of you like.
Pour over the Dal and mix well.
Serve with Rotis, naans or any wheat based breads. The dal tastes heavenly with Rotis.
Apply a dash of lemon juice before serving for that tangy flavour.
