Recipe for an easy to cook Mango Chutney

Ingredients needed for the Mango Chutney
2 medium sized unripe green mangoes
2 cups sugar
1 piece cinnamon
2 cloves
2 black cardamoms
1 tsp red chilli powder
2 tsps mustard oil
Salt to taste

How to prepare the Mango Chutney
Peel the green manoes and cut them in to long thin slices.
Heat the oil add whole garam masala.
When they splutter add the sliced green mango pieces and stir fry for about 2-3 minutes.
Add about 5-6 cups of water to the mangoes along with the red chilli powder and salt to taste.
Let it come to boil and then simmer. Leave it  simmering for at least 6-8 minutes.
Then add the sugar to the pan and stir till the sugar melts.
Leave it to simmer for 3 minutes more. Remove from fire and let cool

Points to Note:
You can store this chutney in the fridge  for more than a fortnight. Handle with care, use only what is needed and that too with a clean and dry spoon.
This well taste good as a side dish with everything like steamed plain rice, rotis, chapathis etc.
