Karikku Appam is one of the well known evening snacks in the Kerala Household. Yummy tender coconuts are always available there. This is a tiffin for the kids when they come back from the school in the evenings. This is tasty as well as nutritious too.
Ingredients needed for Karikkappam
1 cup raw rice
1 tender coconut
1/2 cup sugar
1 tsp soda
Salt to taste
How to prepare the tasty and yummy karikkappam?
Soak rice for about 6 hours and then drain. Keep aside.
Open the tender coconut, keep the water separately.
Remove the soft pulp inside the coconut, keep aside.
Add the rice and the flesh from the tender coconut in the mixer. Grind them to a paste using the water from the tender coconut.
Add salt to taste and 1/4 cup sugar.
Mix well and bring to the consistency of the Dosa Batter.
Keep this batter to ferment for 8 hours without moving.
Heat the Dosa tawa on the flame till it gets hot.
Pour a ladleful of the batter on to the tava and spread with the back of the ladle to a thin round.
Once the side is cooked, flip it over and cook the other side too. Add oil if you like the Dosa crispy.
Serve with stew or curry or even chutney.
