Omelette Curry, as a side dish for chappathies

Ingredients needed for the Omelette curry
3 eggs
1 cup onions chopped fine
1 cup tomatoes chopped
1 tsp chilli powder
1 tsp Dhaniya powdeer
1/2 tsp garam masala powder
1 tsp ginger - garlic paste
Salt to taste
Oil
Coconut milk optional

How to prepare Omelette Curry
Beat the eggs well  and  shape a thick omelette on the tava. Flip it over when one side is done to cook the other side. Remove and cut into 1" pieces and keep aside.
Heat oil in a non stick fry pan, saute onions till they turn golden.
Add chillipowder, Dhaniya / Coriander powder, ginger garlic paste, garam masala powder and chopped tomatoes. Mix well.
Saute till the oil starts oozing from the sides. Add a cup of water / coconut milk, and bring it to boil.
Add salt to taste and mix well.
when the gravy comes to boil add omelette pieces and simmer. Cover and cook for a minute.
Garnish with chopped coriander leaves.
Serve with Toasted Bread, Rotis or Chappathies
