Mexican Rice Recipe

Ingredients needed for the Mexican Rice:
2 cups rice ( washed and soaked)
1 big onion chopped finely
4 cups of chicken stock or water with 2 cubes of chicken stock
1/2 cup carrot sliced in to 1"long thin pieces
1/2 cup crumpled chicken salami
3 tsps cumin seeds
3 tsp tabasco sauce
2 tbsps oil
salt to taste

How to prepare Mexican rice:
Heat oil in a pressure pan which can hold two cups of rice and vegetables.
Add cumin seeds and let them splutter. Add the chopped onions and saute till they turn golden coloured.
Pour in the stock water and allow it to boil.
Then add sliced carrots, salt, crumpled salami, tabasco sauce and then the rice.
Pressure cook the pulao for three whistles or for five minutes, after you put the weight on and simmer.
When done, remove from the cooker to a flat serving dish.
Serve hot, with any hot curry as a side dish.
