Ingredients needed for Lobia and Brinjal Fry
1/2 cup Lobia / Black eyed grams / Vella Karamani Payaru
250 grams / 12 brinjals, purple variety
2 tbsps small onions chopped
2 -3 garlic flakes, chopped
handful curry leaves
4 green chillies,chopped
1 small bit ginger, chopped
1/4 tsp turmeric powder
Salt to taste
3 tsps oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
How to prepare the Lobia and Brinjal fry
Soak white gram or the Lobia in water for 4-5 hours and pressure cook for two whistles till they are tender.
Slice brinjal in to three parts lengthwise and then slice them finely in to thin pieces.
Heat oil in a fry pan, splutter mustard seeds and then add cumin seeds and curry leaves. when they leaves are brown add chopped onions , garlic, green chillies and ginger. Stir well so that they all turn golden. Add Brinjal, stir wel for 2-3 minutes.
Add salt to taste , turmeric powder, cover for a minute.
Then add the cooked Lobia after draining out the water. Mix well.
Cover and simmer for about 5 minutes till the masalas blend well and a nice aroma of the finished dish comes up.
