Kovaikka Masala Fry ( Gherkin Fry)

Ingredients
250 grams green Kovaikka ( Gherkins / tendli )
1 tsp red chilli powder
Salt to taste
Oil for frying

Method
Crush each of the Kovaikka with a stone mortar / crusher, so that the Kovaikka gets flattened out and breaks.
Add salt and keep aside for 10 minutes. Squeeze the gherkins to get rid of the excess salt water.
Add chilli powder to taste and apply the powder so that it coats the Kovaikka evenly.
Shallow fry on a tava with generous quantity of oil on a very low flame. Tendli takes a little longer to cook compared to most of the other vegetables.
Serve with daal and rice.

Note:
To reduce the cooking time and oil, I microwaved the crushed Kovaikkas in the mocrowave for about 3-4 minutes. Then followed the recipe. It came out just as well.
