Ingredients neded for the Drumstick leaves curry:
4 cups leaves
1 cup moong dal
2 cups water
3 tbsps grated coconut
1 tbsp oil
1 tsp mustard
1 tsp cumin seeds
i tbsp chopped small onions
1 /2 tsp chopped garlic
2 green chillies
salt to taste
How to prepare the drumstick leaves curry:
You have to clean the drumsticks well before you start cooking. Remove the leaves from the small sticks / stalks of Drumstick leaves carefully. If a little part of the stick stays in the curry, it might get you stomach upset. Clean them properly well and then start off.
Mix moong dal, drumstick leaves and water. Bring to boil and cook till tender for about 30 minutes in slow fire.
Mash the cooked mixture nicely, so that they all blend well together.
Heat oil in a fry pan, add mustard and cumin seeds.
When they splutter, add small onions, garlic, green chillies and curry leaves.
Saute till they are golden and pour over the curry.
Add salt to taste and simmer for five minutes or so till done.
Note:
Serve hot with steaming rice with a spicy side dish.
This can also be given to the sick patients as a diet.
Not only that, the drumstick leaves used in this recipe are very healthy, less caloried and highly nutritious containing all the vitamins and minerals.
Dos and Don'ts:
What you have to be careful is not to boil the greens for a longer period. The leaves should be just cooked and either over cooked or under cooked drumstick leaves can cause stomach upset.
