Ingredients needed for the Mathan vanpayaru Erissery Recipe
1 cup mathan / yellow pumpkin cut into small pieces
1/2 tsp turmeric powder
3 green chillies
salt to taste
2 cups of water
1/4 cup vanpayaru or the small sized red beans
1 cup fresh grated coconut
1 tsp jeeragam / cumin seeds
2 small onions/ 1 tsp chopped onions (optional)
1 1/2 tsps chilli powder
Coconut oil as needed (about 1 tbsp)
How to prepare the Mathan Vanpayaru Erissery
Take a vessel, add the mathan pieces , turmeric powder, green chillies with salt to taste and 2 cups of water.
Bring it to boil and simmer for about 10 minutes or till the vegetables get tender.
Cook vanpayaru separately with a little salt, remove and add to the cooked vegetables.
Grind 3/4ths cup of the grated coconut, cumin seeds, chilli powder, a little turmeric powder and 2 small sambar onions to a fine paste adding little water.
Mix the coconut paste to the vegetables and see that all of them blend well.
Heat oil in a fry pan, splutter mustard seeds, then add broken chillies, curry leaves and chopped onions.
when the onions turn brown add the remaining grated coconut.
Fry carefully stirring all the time till the coconut gets golden and somewhat crispy.
Pour the vegetables and coconut mix into the fry pan. Mix well.
Serve hot with rice.
Points to Note:
You can reduce the amount of water to get a thicker side dish which can accompany rotis etc
If you are planning to serve with rice then it has to be at the pouring consistency. Adjust accordingly.
Green coloured pumpkins would be the best for this recipe. Yellowish ones will be ripe and so sweeter.
