Dum Pukht Rice Recipe (Bangladesh)


Ingredients needed for the recipe Dum Pukht:
2 cups  basmathi rice
1 tsp saffron soaked in 3 tbsp warm milk)
1/2 kilo mutton (cut into small pieces)
1 tsp black peppercorns
2 0nions sliced finely
4 flakes garlic
4 tbsps of ghee / oil
6 cardamoms
6 cloves
1 cup curd
salt to taste
1 tsp nutmeg powder
1 tsp mace (ground to a paste)

How to prepare Dum Pukht Rice:
 first you have to wash and soak rice for half an hour. Drain and keep aside.
Put mutton pieces into a pressure cooker, add two cups of water, salt to taste, peppercorns, onion and crushed garlic. Cook till the mutton gets tender that is for three whistles or for 15 minutes in low flame after the first whistle .
When cool, strain the liquid and keep mutton pieces and the liquid separately.
Heat ghee / oil in a large pan, add the cardamoms and the cloves. Add the curd and cook till it gets thicker.
Add the cooked mutton pieces, stir on a high flame till the pieces turn darker in colour.
Add the water plus the stock kept aside.The liquid should be one and half times the amount of rice. ( for 2 cups of rice the amount of stock + water will be 3 cups)
Bring to boil. Add the rice,  mace and nutmeg. Pour the saffron mixture on the top. Cover the pan and seal with kneaded dough.
Cook on a low flame till the rice is done. It'll take about 40-45 minutes atleast.
When done, serve hot with raita and pickles.
